Dark Chocolate Chunk Cookies
Serves: 14
Time: 20 minutes
Cookies are 100% my weakness when it comes to sweet treats, so I have tried and tested so many. This recipe is so simple, but the texture is perfectly crisp on the outside and softer on the inside. What really sets it apart is using a chunky good quality dark chocolate bar - the chunkier the chocolate, the better!
Ingredients:
120ml Neutral Oil (sunflower, rapeseed, or light olive oil)
150g light Brown Sugar
50g Caster Sugar
60ml Plant Milk (soy works best)
1 tsp Vanilla Extract
250g Plain Flour
1 tsp Baking Powder
½ tsp Bicarbonate of Soda
½ tsp Salt
180g approx of Dark Chocolate (roughly chopped into chunks)
Cooking Steps:
Pre-heat your oven to 180C. Line a baking tray.
Whisk together both sugars, oil, plant milk, and vanilla until smooth.
Then, add your flour, baking powder, bicarb, salt, and once mixed, add in your chocolate chunks.
Scoop out approx 12-14 evenly sized balls of cookie dough.
Pop in the fridge or freezer for at least 30 minutes before baking (or overnight in the fridge works even better for the perfect rise and texture).
Bake in the oven for around 11-12 minutes, or until golden brown on the outside.
Leave to cool on a wire rack before enjoying!
