Fruit Scones

Scones have always been one of my absolute favourite sweet treats, but why are they so hard to find out and about as a vegan? I decided to take matters into my own hands and make my own… and oh my god, they turned out perfect! Exactly how all my favourite scones over the years have tasted. I will for sure be making these on repeat now. Warm out of the oven with jam, simply amazing. Hope you enjoy!
Ingredients:
500g plain flour
70g caster sugar
¼ tsp baking soda
2 tsp baking powder
Pinch of salt
150g margarine
1 tbsp ground flaxseed mixed with 3 tbsp water
250ml soya milk (sub for oat or almond)
Dried fruit, eg. Sultanas and raisins
Cooking Steps:
Pre-heat your oven to 180C.
Mix your ground flaxseed & water and set aside to thicken.
In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Rub in the margarine with your fingers, until the mixture resembles coarse crumbs.
Now stir in the raisins & sultanas.
Make a well in the dry ingredients and add the flax egg and the plant milk, mixing gently.
Turn the mix onto a floured surface, pat into a round around 4cm thick, and cut out rounds with a cutter.
If baking immediately, place the scones in a container in the freezer first for around 20 mins (helps the fat stay cold so the scones rise.) If baking within 24 hours, place them in the fridge and then cook them straight from the fridge. (Any longer than 24 hours, they are best to be frozen)
When baking, place on a lined baking tray and bake for around 30 mins (slightly longer from freezer or fridge: +3-5 mins)
Let them cool slightly, and enjoy!
