Butter Bean Greek Salad

Serves: 3 as a side dish

Time: 10 minutes 

I was recently on my honeymoon in Greece, so of course spent a lot of the time eating Greek salads. I had forgotten how simple and delicious they are. My version here has added beans for protein, and instead of the traditional feta cheese. It works just as nicely! 

Ingredients: 

  • 400g can of butter beans (drained and rinsed) 

  • 250g cherry tomatoes (chopped in half) 

  • 1 cucumber (chopped into small chunks) 

  • ½ a red onion (finely sliced) 

  • 1 tablespoon dried oregano 

  • 1 tablespoon olive oil 

  • 1 tablespoon red wine vinegar 

  • Salt & pepper to taste 

Cooking Steps: 

 

  1. Chop and mix all of your tomatoes, cucumber, and red onion in a bowl. 

  2. Add your olive oil, red wine vinegar, and oregano last and mix it all again. Add salt and pepper to taste, and enjoy!
